This years version, a modern Kimoto, took years to perfect, the theme being “Nature”, through low intervention brewing methods, a perfect representation of the Zen aesthetic. With a mellow aroma of grain, the freshness provided by instant press to bottle creates a zippy effervescence, a light and sharp palate with strong minerality and a touch of umami, finishing clean and dry.

山城屋ZENは「禅」の精神にフォーカスして生み出された削ぎ落としのお酒。今年は「自然環境に優しい米作り」「絞ったままを皆様に」「紫外線ダメージ減」という3つにこだわって造られました。無濾過、無調整の自然な味わいと、微発泡感のある搾りたてのフレッシュさが感じられます。輪郭のある酸と繊細な発泡感、微かなビター感が食欲をかきたて、食事に寄り添う山城屋らしさは健在。ふっくらとした柔らかな米の旨味、サラリとした甘味を感じながらも後味はシャープなキレを感じます。
