Back in 1988, when cultivation breweries were quite rare, Gochouda Shuzo endeavored to plant their own Yamadanishiki rice for brewing. This was a big challenge as there was no precedent for growing Yamadanishiki in their southern region. The brewers themselves took on the extensive process of planting in the Spring, cultivating all Summer, harvesting that rice and then brewing it in the Fall and Winter to create sake which could express all aspects of the local environment and community. This dedication paid off in 1990 with the recognition of the National New Sake Appraisal in the form of a gold medal for their Daiginjo made with their own home grown Yamadanishiki.
Since, the brewery has established itself as a producer of consistently high quality, umami rich, elegant sake nationally and internationally.
九州にて酒造好適米である「山田錦」の栽培の前例がない中、1988年に五丁田は山田錦を栽培するという大きな挑戦に挑みました。春の田植えから始まり、夏の栽培、秋冬の醸造まで、全ての工程を蔵人が一貫して行い、現地の環境と地域社会の特色を出した酒を造ることが可能に。努力は実を結び1990年に行われた全国新酒鑑評会にて、自社栽培で育てた山田錦を使用した大吟醸が金賞を受賞しました。以降、五丁田酒造は一貫した高品質を確保し、うまみ際立つ上品な日本酒メーカーとして国内外でトップクラスの地位を確立しています。
