Brewery cultivated Yamadanishiki grown adjacent to the brewery with bare minimum levels of agro-chemicals, expertly polished, fermented and pressed by the gentle method of Shizuku-Shibori into Tobin and finally matured at cold temperatures for true perfection.

蔵に隣接している自家田にて、農薬を最小限に抑え栽培された山田錦を、精米歩合39%まで磨き上げています。卓越した技術により仕込まれた後、圧力をかけずに醪(もろみ)自身の重さで一滴一滴落ちてくる雫を斗瓶(1,8Lが10本分入る瓶)に集め、冷蔵室にて低温で熟成させています。南国果実のような香りと、まろやかな旨味が調和した極上の一本です。
