Namazume refers to the process where, for Ryujin Shuzo, flash pasteurisation takes place just after pressing, then rapidly chilled back down to zero degrees celsius within minutes. Ryujin Shuzo龍神酒造

The brewers practice the traditional techniques of the Nanbu guild, best known for brewing sake which is clear and fine grained. Ryujin Shuzo is the producer of 2 exceptional brands Oze no Yukidoke and Ryujin. The first, meaning the snowmelt from Oze, represents delicate and polished sake, all made with high grade and often uncommon sake rice varieties with higher polishing ratios, brewed in small batches, all by hand and fermented in small tanks. The Ryujin brand represents flavorful and drinkable sake that pair wonderfully with a wide range of foods and flavours.
