Steering the ship at Kamonishiki brewery is Yuichi Tanaka Toji, the master brewer, having achieved the position of head brewer of his familyโ€™s sake business when he was just 23.  As a young brewer he is full of ambition and passion to make delicious sake that will appeal to the modern person who has a diverse palate and subsists on a varied, international diet.  

He dedicates time daily to tasting and studying the sake of the most popular brands in attempts to firmly grasp the intricacies of what makes a sake sought after.  

Niigata Prefecture, where Kamonishiki has been a functioning sake brewery in Kamo city since its establishment in 1893, is a region most known for its distinctively clean and bone dry style of sake, Tanrei Karakuchi.
