MATSU NO TSUKASA, Junmai Daiginjo, Blue Yamanoue (720ml) 松の司 純米大吟醸 山之上

The Yamanoue area with its gentle hills is renowned for growing fruit such as grapes and nashi pears, which implies the soil is well drained. The rice fields covering this hilly area have reddish soil mixed with coarse gravel and very little clay, which tends to produce a light style of sake with a trace of astringency.


山之上地区はなだらかな丘陵地でブドウや梨などの果樹栽培が盛んなことからも土壌の水はけの良さが窺えます。この丘陵地のかかりに広がる田圃で育った山田錦と、同じ地区で採水した軟らかな仕込水を用いることで、粗い砂礫からは軽快さを、粘土質の少ない赤茶けた土からはわずかに収斂味を帯びた複雑味を宿しながら、なめらかで伸びのある味わいに仕上がっています。
