Yamawa Shuzoten was established in 1896 in Kami Town, Miyagi prefecture, when the founder, Kazubei Ito closed his family’s apothecary business and embarked on a new journey of sake brewing. Perhaps because of the family’s roots in healing, the philosophy was established that "medicine and food are one in the same."

The brewery is particular about rice, using organically grown rice purchased by contract. Yamawa Shuzoten strives to "brew sake that quenches thirst and soothes going down like water." Washigakuni, their flagship brand, has been around since its establishment, brewed by traditional methods, it has been long loved by the local community.

山和酒造店は1896年、宮城県加美郡加美町で創業者の伊藤和兵衛が家業の薬屋を廃業し、酒造りに乗り出したのが始まりです。そのルーツからか、蔵元は "医食同源 "の考えのもと契約栽培の無農薬米を使用し、"水のように喉を潤す酒を醸す "ことを心がけているそうです。創業当時からの銘酒であるわしが國は、昔ながらの製法で醸造され地元の人々に長く愛されています。

In recent years, the seventh-generation master brewer, who received training from the Nanbu Toji guild, Mr. Daisuke Ito, launched Yamawa, a brand with limited distribution. Yamawa has won numerous awards at the National New Sake Competition, gaining great recognition in the industry. The sake is made with such careful attention to the selection of rice and yeast that it is said that the quality is unprecedented!

近年、南部杜氏から伝統の技を学んだ七代目現蔵元の伊藤大祐氏が、流通を限定したブランド山和を立ち上げました。山和は全国新酒鑑評会で数々の賞を受賞し、高い評価を得ています。原料米や酵母の選定にこだわり、「酒質が高すぎる」と言われるほど丁寧な酒造りが行われています。山和は、日本酒ファンのみならず他県の蔵元からも高い評価を得ています。

The environment surrounding the sake industry has been changing and is sensitive to trends in recent years. However, Mr. Ito has no desire to move away from the traditional methods of sake brewing that he cherishes. His motto is "Simple is best." Mr. Ito believes that the true beauty of simplicity is difficult to convey immediately but simply good things stand the test of time.

Yamawa Shuzoten will continue to brew sake with their utmost attention and care to detail, valuing above all, the basics, unwilling to be swayed by fading fads. The new brand Yamawa has already received the highest of praise not only by sake consumers but also by fellow brewers around Japan.

日本酒業界を取り巻く環境は常に変化していますが、伊藤氏は伝統的な酒造りから脱却する気はないようです。酒造りのコンセプトは　"Simple is best"。シンプルなものはすぐには浸透しないもの。しかし、シンプルなものこそ長く愛されるいいものだと伊藤氏は考えています。山和酒造店は流行に左右されることなく、基本を大切に、こだわりを持った酒造りをまい進しています。
